Packed with umami from dried scallops, dried anchovies, dried oysters, shiitake mushrooms, and natural spice blends, this sauce transforms a simple dish into a gourmet experience. Ingredients:

  • 2 tbsp olive oil

  • 3 slices of bacon, chopped

  • 1 cup mixed vegetables (carrots, peas, corn)

  • 2 tbsp XO-style chili garlic sauce

  • 3 cups cooked rice (preferably day-old for the best texture)

  • 2 scallions, sliced (for garnish)

  • Salt and pepper to taste

Instructions:

  1. Crisp the Bacon – Heat olive oil in a pan over medium heat. Add the chopped bacon and cook until golden brown and crispy.

  2. Sauté the Vegetables – Toss in the mixed vegetables and sauté until tender, about 3–4 minutes.

  3. Add the XO Magic – Stir in the XO-style chili garlic sauce, letting it coat the ingredients evenly for that deep umami flavor.

  4. Toss in the Rice – Add the cooked rice and toss everything together like a pro. Stir-fry for another 2–3 minutes until well combined and heated through.

  5. Season & Serve – Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with sliced scallions for a fresh finish.
